A Toast to You: Holiday Drink Recipes

If you can believe it, Christmas Eve is just around the corner! If you are like me, the anticipation that's been growing is enough to kill you! One of the best parts of the evening in my home has always been the holiday libations {aka cocktails}, so I thought it only fitting that I dish out some of my favorite recipes for you to share.Peppermint Eggnog Punch

  • 1 quart peppermint ice cream
  • 1 quart dairy eggnog or canned eggnog
  • 1 cup rum (optional)
  • 2 10 ounce bottles (1-1/4 to 2-1/2 cups)ginger ale, chilled
  • Additional peppermint ice cream (optional)
  • Peppermint sticks (optional)
1. Place ice cream in a large chilled bowl; stir until small lumps remain. Gradually stir in eggnog. If desired, stir in rum.
2. Transfer to a punch bowl; add desired amount of ginger ale to reach desired consistency. If desired, top each serving with additional peppermint ice cream and peppermint sticks. Makes 18 (4-ounce) servings.

Pomegranate Rosemary Royale

  • 1/4 cup water
  • 1 tablespoon sugar
  • 2 teaspoons fresh rosemary leaves
  • 1/2 cup pomegranate juice
  • 2 cups Champagne or sparkling wine
1. Combine 1/4 cup water and sugar in a small saucepan; bring to a simmer, stirring until sugar dissolves. Remove from heat. Add rosemary; let stand 30 minutes. Strain into a bowl; discard solids.2. Pour 2 tablespoons pomegranate juice and 1 tablespoon rosemary syrup into 4 Champagne glasses. Top each serving with 1/2 cup Champagne. Serve immediately.

  • 3 oz peach schnapps
  • 3 oz Bacardi® 151 rum
  • 12 oz orange juice
  • 4 oz Sprite® soda
  • 3 oz Blue Curacao liqueur
1. Mix in a large pitcher and serve
