Fall Recipe: Zuchinni Bundt Cake
Love, love, love this simple & delicious recipe that I got from my sister! It is a zuchinni bread recipe, but I always do it in a bundt cake pan so it looks pretty & can be displayed on my cake stand. The perfect Fall treat that's made with ingredients you most likely already have on hand.Ingredients:
- 1 Cup Oil (I use Extra Virgin Olive Oil)
- 2 Cups Sugar
- 3 Eggs
- 3 tsp. Vanilla
- 2 Cups Shredded Zuchinni
- 3 Cups Flour
- 1 tsp. Baking Soda
- 1 tsp. Salt
- 3 tsp. Cinnamon
- 1/4 tsp. Baking Powder
- Combine oil, sugar & eggs in large mixing bowl. Beat Well. (I just throw them into my KitchenAid Mixer).
- Blend in Vanilla & Zuchinni.
- In a separate bowl combine all dry ingredients.
- Add dry ingredients to oil mixture and blend well.
- Pour into bundt cake pan or 2 loaf pans.
- Bake @ 350 degrees for 45 min- 1 hour depending on your oven.
- Sprinkle the top with cinnamon sugar.
Note: You can also add 1/2 cup chopped nuts if you'd like. These should be added after all ingredients are mixed and before the batter is poured into the pans.Enjoy & Happy Beginning of Fall!
