Fall Recipe: Zuchinni Bundt Cake

Best Fall Recipes! This Zuchinni Bundt Cake is #1!! Super easy and delicious,Love, love, love this simple & delicious recipe that I got from my sister! It is a zuchinni bread recipe, but I always do it in a bundt cake pan so it looks pretty & can be displayed on my cake stand. The perfect Fall treat that's made with ingredients you most likely already have on hand.Ingredients:

  • 1 Cup Oil (I use Extra Virgin Olive Oil)
  • 2 Cups Sugar
  • 3 Eggs
  • 3 tsp. Vanilla
  • 2 Cups Shredded Zuchinni
  • 3 Cups Flour
  • 1 tsp. Baking Soda
  • 1 tsp. Salt
  • 3 tsp. Cinnamon
  • 1/4 tsp. Baking Powder
  1. Combine oil, sugar & eggs in large mixing bowl. Beat Well. (I just throw them into my KitchenAid Mixer).
  2. Blend in Vanilla & Zuchinni.
  3. In a separate bowl combine all dry ingredients.
  4. Add dry ingredients to oil mixture and blend well.
  5. Pour into bundt cake pan or 2 loaf pans.
  6. Bake @ 350 degrees for 45 min- 1 hour depending on your oven.
  7. Sprinkle the top with cinnamon sugar.

Note: You can also add 1/2 cup chopped nuts if you'd like. These should be added after all ingredients are mixed and before the batter is poured into the pans.Enjoy & Happy Beginning of Fall!MollieSignature
