Easter Brunch Inspiration: The Menu

Today we continue with the whole reason for our Easter gathering; The FOOD!  When planning the menu  I knew that I had a large task ahead of me. Our family is filled with picky eaters, so accommodating everyone meant adding to my cooking duties. So needless to say, I was stressing a little bit the morning of our brunch. I wondered how much I would actually be able to accomplish before everyone showed up. Luckily, I have an incredible mother who was kind enough to lend me a hand. Everything turned out better than I had imagined and we had rave reviews about the food and presentation! Here is the breakdown of our Easter Brunch Menu.

Peach Mimosa's:

A light cocktail which is appropraite for early morning. Simply add peach nectar, orange juice, grenedine syrup and champagne to a pitcher and mix. 

Eggs Benedict:

Remember when I said presentation is key? Here is a prime example of what a little bit of planning and a dash of fresh herbs gets ya! Yes, I could have made eggs Benedict with a regular shaped muffin and slice of ham. But what fun is that? Instead I jazzed it up by cutting them in the shape of flowers and placing a sprig of green on top for added aesthetic. Beautiful, right!?
Monte Cristo Sandwiches:Can you say YUM!? These beauties were my personal favs. Fresh french bread dipped in egg mixture, baked with ham, turkey and Swiss and topped with strawberry puree and strawberry display. I will definitely be making these again, ASAP.Peach Parfaits:These were a HUGE hit with everyone and were the easiest thing I've ever made! I simply blended together vanilla yogurt with with some fresh peaches. It wasn't quite the color I wanted so I added 2 drops of yellow coloring to 1 drop red and came out with the perfect shade to compliment my decor. All was topped off with whipped cream, a blueberry and mint to garnish.
